Ingredients
- 1 package of arnold Honey Wheat Sandwich Thins rolls
 - 2 cups leftover turkey, shredded (can use rotisserie chicken as well)
 - 1 avocado, sliced
 - 1 tomato sliced
 - ½ onion, thinly sliced
 - 1/3 cup queso fresco
 - ½ cup refried beans
 - Pickled jalapeño
 - Adobo Sauce:
 - 1 can chipotle peppers
 - ½ can fired roasted red peppers
 - 1 lime, juiced
 - 2 tbsp olive oil
 
Instructions
- For sauce, using a food processor or emersion blender, blend all ingredients together until smooth and season with salt and pepper.
 - Open Sandwich Thins rolls and spread refried beans and top with shredded turkey, tomato, avocado, onion, and jalapeño.
 - Sprinkle queso fresco and drizzle with Adobo sauce.
